Spotgoedkoop vond ik het varkenshaasje, blijkbaar weten de Filipinos niet dat dit het lekkerste stukje van een varken is. De keihard gebakken huid vonden ze zelfs lekkerder.

Wel kipfilet vinden velen ook maar niets daar. Ze hebben liever de billen en het andere rode vlees van een haan, en liefst ook nog vet als het kan. Ik heb daar ook satés gegeten waar tussen het vlees telkens een blokje vet tussen zat. Tja, dat zijn de eetgewoonten daar. Hier was dat vroeger ook zo. Heeft waarschijnlijk met armoede te maken. Het eten dat ze eten moet zo voedzaam mogelijk zijn, veronderstel ik

vind ik ook eigenaardig... ik ben een echte kippeborst eter... en toen bij een BBQ restaurant was op palawan die enkel kip serveert was er geen kippeborst te bespeuren  :weetikniet: wat ze ermee doen achter de slachting weet ik niet, maar de vriendin heeft al gezorgt dat er genoeg kippeborst fillet zal zijn als ik terug kom  :happy: ze zijn nu al 2 weken oud  :lachen:

Echt? Dat is die verschrikkelijk stinkende garnaalpasta.

Ja hoor, ik heb net effe op wikipedia gekeken en daar zag ik de bevestiging:

Bagoong Alamang
Bagoong Alamang is Filipino for shrimp paste, made from minute shrimp or krill (alamang) and is commonly eaten as a topping on green mangoes or used as a major cooking ingredient. Bagoong paste varies in appearance, flavor, and spiciness depending on the type. Pink and salty bagoong alamang is marketed as "fresh", and is essentially the shrimp-salt mixture left to marinate a few days. This bagoong is rarely used in this form, save as a topping for unripe mangoes. The paste can be sauteed with various condiments, and its flavour can range from salty to spicy-sweet. The colour of the sauce will also vary with the cooking time and the ingredients used in the sauteeing. Cincalok is the Malaysian version of 'fresh' bagoong alamang.

Unlike in other parts of Southeast Asia, where the shrimp are fermented beyond recognition or ground to a smooth consistency, the shrimp in bagoong alamang are readily identifiable, and the sauce itself has a chunky consistency. A small amount of cooked or sauteed bagoong is served on the side of a popular dish called "Kare-kare", an oxtail stew made with peanuts. It is also used as the key flavouring ingredient of a sauteed pork dish, known as Binagoongan (lit. "that to which bagoong is applied"). The word bagoong, however, is also connoted with the bonnet mouth and anchovy fish version, bagoong terong.

Penne With Eggplant And Swordfish

One of the advantages of growing up in a tropical island like the Philippines is having access to fresh seafood. I grew up eating fresh seafood. And I mean just-caught-that-day-kinda-fresh, so fresh some were still squiggling and jumping out from the containers! None of those previously frozen stuff...uh,oh.







Tonight's dinner was pasta with fish. Not from the can but fresh fish. Fortunately, I didn't have to clean the fish like I learned back in the Philippines, as I already got my fish filleted. I never had pasta with fish before, apart from having tuna casserole (which uses canned tuna), so it doesn't count for me. And I'm glad I tried this. This is definitely a keeper

Tuna sashimi 2 keer gegeten in Cebu.

1 keer in de Marriott. Heel lekker en zacht. De zalm sashima was daar dan weer slecht. Veel te hard.

1 keer in de Grand Majestic. Daar was het net andersom. De zalm was lekker en de tuna niet.

Zal er zeker aan liggen hoe ze die stukken snijden zeker  :weetikniet:

En dan mogen we geenzins het nationale dessert van de Filipijnen vergeten.

Halo-Halo, de eerste maal heb ik het in Manila gegeten. De kleurencombinatie was prachtig ( spijtig genoeg heb ik er geen foto van) en het smaakte heerlijk.
