What's on your table for Noche Buena?

For Filipinos, the long — albeit joyful — preparations for Christmas will all come down to this night: Christmas Eve, a culmination of traditions celebrated by every Filipino family from all walks of life. As December 24th dawns, the last mass of Misa de Gallo will be attended and then each family will come home to share a humble feast, the most anticipated dinner of every year — the Noche Buena. So, what will be on the table for Noche Buena? Celebrities and famous personalities share their thoughts on what's in store for their Christmas feast. Our tradition starts with a special Christmas dinner. My wife cooks the favorites and requests of our two children, using family recipes. For Noche Buena, we always have hamon, queso de bola, hot chocolate and ensaymada. – Jose Rene D. Almendras, Department of Energy Secretary

Two weeks before Christmas, well-respected broadcaster Mel Tiangco's  menu list for the family's Noche Buena, Christmas dinner and New Year's day is already complete.

"Our Noche Buena feast is basically simple. We have ham, queso de bola, Everlasting or embotido, Chicken Galantina, tsokolate and all kinds of breads. We have the usual ensaymada, raisin bread from Baguio and French bread," she says.
Christmas Dinner, though, is more special for the Tiangco clan.
"For this Christmas, we will be having asparagus soup, turkey, pork loin, green salad, and crabs," she adds.
Tita Mel, as she is fondly called, is quick to say that what is most important for them is that all of her children and grandchildren are there for their traditional Christmas dinner.

"I have never outgrown my craving for all-time Pinoy delicacies like sapin-sapin, puto, kutsinta, halo halo, etc. Cakes or Reese chocolates as dessert will make the feast complete. "It has been a tradition for us for the last 20 years or so to celebrate mass at home at about 6 pm every 24th with friends and neighbors. Father Mark Lesage (a Belgian priest and lifelong friend) comes to celebrate the mass. The kids all dress up like the characters in the Nativity scene and are always part of the mass. It changes every year, as Father Mark is very creative in these things. The mass is always held outside the garden.

After the mass, about 100 people stick around for some cocktails before leaving for their respective family gatherings.  We normally are left with close family members plus Father Mark.

The food for this year: Jamon China (a Mañosa tradition since my parents), Jamon Serrano, Chorizo, Manchego Cheese, Lomo,  Squash soup (home made); Cochinillo (home made);  Roast Beef from Santis Deli, Roast chicken, Baked fish, Green Salad, Mashed potatoes; Cheese Platter, various desserts that guests bring, and lots of wine and Belgian beer." – Arch.
