Best culinary finds of 2011

By CHEF GENE GONZALEZ
Manila Bulletin January 5, 2012

MANILA, Philippines – Many readers have been emailing me asking if I was coming out with my best for the year. Well, here it is. This is a compilation of the so many wonderful delights (with a few pounds added) that was part of my frequent dining escapades.

Best Ngohiong in Cebu — Domings in Fairlane Village, Guadalupe open from 7:30 am — 1:30 pm only. These well known fritters laced with five spice powder are truly one of the best in the city.

Best Ramen in Cebu — Ramen Kame Kichi — Panagdait Road Mabolo. Try the special Miso Ramen with three degrees of spiciness. This features a well-simmered flavorful broth.

Best Inasal or BBQ in Cebu — Matias — skewered meats cooked and redolent of wood smoke with their homemade puso or fragrant red wrapped rice. One can eat with the hands (Kinamot or bugoy bugoy style) and rough it up.

Best Chinese Restaurant — Jazmine at New World Hotel is still the most elegant in ambience and the most elegant in cuisine with the fine work of chef Choi Wing Ki.

Best Chilean Wines of the year

1. Luis Felipe Edwards Doña Bernarda 2008 — a four grape blend of beautiful aromas of dried plums. Black fruits, violets with hints of mocha and chocolate; round, soft, velvety and full

2. Montes Alpha M 2007 — a blend of Cabernet Sauvignon, Merlot, Cabernet Franc and petit verdot. Intense color but soft round tannins, lots of red and dark fruits with hints of spice, cedar and coffee; has potentials for ageing up to 20 years.

Best Bordeaux for the year - Chateau Pavie 2000.  This wine displays the epitome of French wine making skill and balanced with the correct aromas and flavors. Lopsided characters are not present in this wine that almost scores perfectly. It was served during the monumental auction wine dinner recently to only 14 guests.

Best Wine event of the year — Still is and has ever become an even bigger gastronomic production number as handled this time by the Marriott, the 11th Wine Experience highlights over 700 wines and spirits for tasting with an incredible array of food.

Best South African wine (with humor) - Bored Doe — a Merlot, Cabernet Sauvignon — Malbec, Petit Verdot blend from the Paarl region of South Africa.

Best Indian — New Bombay at the Columns, corner of Ayala and Gil Puyat. You can get authentic flavors if you order everything spicy! The bean and lentil dishes melt in the mouth. The Fish Makanwhala (not in the menu) is ethereal and so are the biryanis that keep their long basmati grains intact and to the bite. New favorite is the Bhindi Masala Korkuri or fried okra.

Best for Shenzen Shoppers — Arcadia located at the upper floor of the mall beside the train station on the border; Hong Kong quality at Shenzen or half and even a third of the price.

Best for Guangzhou Shoppers

1. Lucky Restaurant — Ming Shing Mall — Large 600 — 800 seaters, diverse fresh dimsum selection, great lunch place.

2. Hong xing Seafood Restaurant — Yanjiang Road — open till the wee hours of the morning; vast selection of seafood, roast and cold items.

Best for Beijing Tourists

1. Xiao'r Lao Man — great dumplings bursting with filling; very tasty and spicy steamed beef; great textured Bean Curd sticks and scallions Pancakes with Pork; Chaoyangquan Hui Beili

2. Meizhoudong Po — Yayuncun District near Marco Polo Hotel — This outlet has outstanding Sichuan Cuisine.

3. Dadong — This plush restaurant specializes in duck preparations and new style Chinese cooking. Visit the one in Jin Bao Hui shopping center on Jin Bao Street.

Best Durian seller (by the sidewalk) — Uncle Tito on Torres Street in Davao parked on his Mini Van would have a great member of Durian varieties, all with different characters.

Best Durian seller in an outlet — Farmer's on Pryce Road near the corner of Torres Street; Larry Miculob's harvests from his farm are truly superior and well selected fruits.

Best Bulalo in Davao - Diaz in Agdao Market; have a bowl of steamy hot beef shins to beat the early morning hunger and chill.

Best Australian Sparkling — Bird in Hand Sparkling Pinot Noir, a clean, vibrant wine with a complexity of flavors from citrus to fleshy stone fruit, minerals and earthy mushroomy notes.

Best Native Fried Chicken — Bakbak — located in the Pryce area near the corner of Torres Street. This chicken is fragrant from the marinade of lemon grass, onions, garlic and pepper. It has no sophisticated coatings or breadings, though a bit stringy because it is free range; it is bursting with flavor.

Best Take out cuisine in Manila — Jyn's at 622-25-21. The Mediterennean chicken, Greek salad and Linguine in Mussel Suffron broth are my choice for a three-course Lunch or dinner especially when I am home and just want to chill.

Best Kaiseki Dinner — Dusit Thani Hotel executed by Chef Fukata and arranged by BDO consultant Toshi Morita. This dinner would rival any multicourse dinner in any sophisticated gastronomique center in the world.

Best Fried Quail — delicious pulutan at an equally delicious price. This is in the downtown area of Davao where quails are split and fried to a crisp then served with spiced salt with black pepper.

Best Burgers in Manila

1. Boulevard Diner on Xavierville Avenue. It boasts of thick 1/3 pounds patties, imaginative toppings if you are not a purist; great wings too.

2. The Burger Project — Maginhawa street — Let's you customize your burger although there are ready made combinations such as the Bleu Buffalo, sloppiest Joe, or Waster Bacon Melt.

Best Hearty Native Soup — Bulcachong on Gen. Luna Street in Davao gives you a well-simmered, thick and heady beef soup to make one up from an evening of inebriated excesses.

Best Italian Sparkling — Mionetto Extrabrut Prosecco — This sparkling Italian wine is of a drier style and has pleasant apricot and stone fruit character with musk and citrus.

Best Rustic Pinoy Bread — The Dimasalang Bakery on Mabini Street, Bayan ng Pasig with its antiquated Bonette that is known by all old Pasig families.

Best Panciteria Cooking — Caffe La Lotte — No! this place is not in Chinatown, it's on Paz Guazon (Otis) in front of the Toyota Building. Old style flavors such as glutinous rice — quiampong, quekiam, pato misua, oyster cake all give a semblance of nostalgia. Personal favorites are the spicy, crunchy, frog's legs and the Sincerity fried chicken.

Best Mexican Restaurant in Central Luzon — Iguana's Cantina Mexicana — reasonably priced food with on assortment of 100 tequilas on the bar — best bet are the beef selections on the menu.

Best Panciteria Cuisine in Greenhills — Taza de Oro on Ortigas brings Binondo and Hongkong Style specialties under one roof.

Best Korean Home Cooking in Makati — Top Dish on Durban Street where home cooking is combined with their heady homemade wine called Dong Dong Ju.

Best two Discoveries

1. Marty Adriano a.k.a. MAD meats ( 0917 8987804). His long smoked bacon is out of this world bearing sweetness in his smoking technique.

2. Happy Cream Puff — Malugay Street, Makati — great Japanese style cream puff in a variety of flavors

Best Cebu Homecooking — Abaseria on President Quirino Street, Villa Aurora in the Mabolo Area where creative twists are given to well-executed homey recipes.

Best Neighborhood Café — Chef's Galley — operated by Chef Rainbow Hackett, the cooking is unpretentious but downright hearty and wonderful; Located at C. Benitez Street near the Santolan gate of Horseshoe Village, Q.C.

Best Batangas City Stop — Hot and Cold Café — Great ribs, sandwiches and creative coffee selection

Best Bangkok Finds

1. Madame krok — (Soi Lang Suan entering the corner of Four Seasons Hotel on Raj Damri) — great budget meals, good noodles, rice dishes and Thai salads with roast chicken

2.  Larb Lang Suan - (Soi Lang Suan entering the corner of Four Seasons Hotel on Raj Damri) — authentic charcoal-grilled northern style salads with glutinous rice in a garage setting. Check out the little authentic Thai ice tea and ice coffee stand beside it.

3. Sornthong Seafood Restaurant — one of the best Chinese-Thai seafood restaurants. Be sure to come early because the queue on the sidewalk is rather long. This is a sign of how the locals regard the cuisine of this place.
